Cream of Broccoli Soup



 

4 cups chicken broth - low-fat okay

3 cups chopped fresh broccoli florets

½ cup chopped onion

1 bay leaf

½ tsp. salt

¼ tsp. black pepper

¼ cup all-purpose flour

1/3 cup cooked ham - diced (optional)

½ cup heavy cream

Instructions:

Combine chicken broth, broccoli, onion, bay leaf, salt, and pepper in large saucepan.

Bring to boil.

Reduce heat and simmer for 30 minutes.

Remove bay leaf from pan.

Puree half of soup and flour in blender.

Return to saucepan.

Simmer until thick, stirring constantly.

Add ham (if desired) and cream to saucepan.

Stir and simmer for 10-15 minutes.
