Mozzarella Salad


 

1 lb. fresh mozzarella (the stuff that comes packed in water), sliced

1 pint sweet cherry tomatoes -or any fresh garden tomatoes sliced

1 cup fresh basil, chopped

1 small red onion, sliced thin

Extra basil for lining bowls

Dressing: 2 cloves garlic, minced

¼ cup balsamic vinegar

¼ cup white balsamic vinegar

3T olive oil

Salt and fresh ground black pepper to taste

Instructions:

Mix garlic and vinegars together and let sit for as long as you can.

Toss tomatoes, onions, basil and fresh mozz together.

Sprinkle with salt and fresh ground pepper.

Line bowls with more basil leaves and put a scoop of the tomato mixture into each bowl.

Dress with the vinegar/ garlic combination and drizzle with olive oil.
