Zucchini Bread



 

2 eggs

¾ cup oil

1½ cup sugar

2 tsp vanilla

2 cups peeled and shredded raw zucchini

2 cups flour

1 tsp salt

1 tsp baking soda

1 tsp baking powder

1-3 tsp cinnamon

½ tsp nutmeg

½ cup chopped nuts

Instructions:

Cream: 2 eggs, ¾ cup oil, 1½ cup sugar.

Add: 2 tsp vanilla, 2 cups peeled and shredded raw zucchini, 2 cups flour, 1 tsp salt, 1 tsp baking soda, 1 tsp baking powder, 1-3 tsp cinnamon, ½ tsp nutmeg, ½ cup chopped nuts.

Mix well.

Pour into a loaf pan and bake one hour at 325 degrees.
