Pineapple or Mango Salsa



 

1 pineapple or 3 ripe mango

½ cup fresh cilantro, chopped

2 large fresh tomatoes

2 large cloves garlic

1 small red onion

½ fresh red bell pepper

Fresh chilies to taste

½ tsp ground cumin, more if you like

½ tsp fresh ground pepper

1 tsp fresh squeezed lemon or lime juice or more to taste

Salt to taste

Instructions:

Combine in a glass or wooden bowl (not metal): 1 pineapple, peeled and cored and diced into very small pieces or 3 ripe mangos, peeled, cored and chopped, ½ cup fresh cilantro, chopped, 2 large fresh tomatoes, chopped, 2 large cloves garlic, minced, 1 small red onion, peeled and chopped, ½ fresh red bell pepper (optional), chopped fine, Fresh chilies to taste, seeds removed and minced fine, ½ tsp ground cumin, more if you like, ½ tsp fresh ground pepper, 1 tsp fresh squeezed lemon or lime juice or more to taste, Salt to taste.

Serve fresh with tortilla chips or use to top grilled fish. Or dump the whole lot into a sauté pan and bring to a quick boil and serve over pasta.
