Maque Choux


 

3 T olive oil

2 large onions, peeled and chopped

2 green peppers, seeds removed and chopped

3 large tomatoes, chopped

1 stalk celery, chopped

9 fresh ears of corn, corn cut from the cob

2 jalapeno peppers, seeds removed and chopped

2 cups vegetable stock or chicken stock or water

3 cloves of garlic, minced

4 T butter

1 tsp cayenne pepper (optional)

1 tsp cajun seasoning (optional)

Salt and pepper to taste

Instructions:

Sautee onions and garlic in the olive oil until translucent.

Add the green peppers, tomatoes, celery, jalapenos and cook until tender.

Add the corn (scrape the cobs off for the "milk" and add that too) the water or stock and the seasonings.

Simmer until the corn is cooked 10-20 minutes.

Add the butter and simmer until you serve.

Serve in big bowls.
