Poulet Basquaise



 

1 T oil

2 cloves garlic, minced

2 oz mushrooms, chopped

6 oz tomato paste

½ green pepper, chopped

½ red pepper, chopped

4 large tomatoes, chopped

Pepper to taste

½ tsp salt or more to taste

6 oz chardonnay

2 T fresh parsley, chopped

2 T fresh basil, chopped

1 lb. chicken breast

Instructions:

Rub chicken with tomato paste and season with salt and pepper.

Set aside.

Sauté the mushrooms and garlic in the oil.

Add the chicken and cook until caramelized.

Add the bell peppers, tomatoes, wine, parsley and basil and simmer until the chicken is cooked through.

Check to see if more salt or pepper is needed for taste.

Serve over rice or pasta.
