Limoncello


 

Zest from 15 lemons, well scrubbed

750 ml vodka

4 cups sugar

4 cups water

Instructions:

Add the lemon zest to the vodka and let stand for at least 10 days, longer if you can wait.

In a saucepan combine the sugar and water, cook until thickened and let cool.

Strain the zest from the Limoncello, use cheese cloth or a strainer or a coffee filter.

Add the cooled sugar syrup to the lemon vodka.

Allow to rest for another 10 to 30 days.

Bottle and store in the freezer until ready to serve.
